2 medium zucchinis, cut into fry-shaped sticks

1/2 cup panko breadcrumbs (or whole wheat for healthier option)

1/4 cup grated Parmesan cheese (optional, for extra flavor)

1 teaspoon garlic powder

1/2 teaspoon paprika or Italian seasoning

Salt and pepper, to taste

1–2 eggs, beaten (or use egg whites)

Olive oil spray
Instructions

Prep the zucchini:
Wash and slice zucchinis into thin sticks (about 3 inches long). -
Set up dredging station:

In one bowl: beat the eggs.

In another bowl: mix panko, Parmesan, garlic powder, paprika, salt, and pepper.

Coat the zucchini:
Dip each zucchini stick in the egg, then press into the breadcrumb mixture until coated. -
Preheat air fryer to 400°F (200°C) for about 3 minutes.

Air fry:

Lightly spray the zucchini fries with olive oil.

Arrange in a single layer in the air fryer basket (cook in batches if needed).

Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
