  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika or Italian seasoning

  • Salt and pepper, to taste

  • 12 eggs, beaten (or use egg whites)

  • Olive oil spray


Instructions

  1. Prep the zucchini:
    Wash and slice zucchinis into thin sticks (about 3 inches long).

  2. Set up dredging station:

    • In one bowl: beat the eggs.

    • In another bowl: mix panko, Parmesan, garlic powder, paprika, salt, and pepper.

  3. Coat the zucchini:
    Dip each zucchini stick in the egg, then press into the breadcrumb mixture until coated.

  4. Preheat air fryer to 400°F (200°C) for about 3 minutes.

  5. Air fry:

    • Lightly spray the zucchini fries with olive oil.

    • Arrange in a single layer in the air fryer basket (cook in batches if needed).

    • Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.

  6. Serve immediately:
    Best enjoyed hot with a side of marinara, ranch, or Greek yogurt dip.
