Ingredients
For the Pancakes:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup buttermilk
1 egg
1 tablespoon melted butter
½ teaspoon vanilla extract
For the Burgers:
1 lb ground beef (80/20 blend for juiciness)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon smoked paprika
1 tablespoon Worcestershire sauce
For the Toppings:
6 slices crispy bacon
4 slices cheddar or American cheese
¼ cup maple syrup
1 tablespoon butter (for cooking pancakes)
Instructions
Make the Pancakes:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients and mix until just combined (don’t overmix).
Heat a skillet over medium heat and grease with butter. Pour ¼ cup batter per pancake and cook until bubbles form, then flip and cook until golden brown. Set aside.
Make the Burgers:
In a bowl, mix ground beef, salt, pepper, garlic powder, paprika, and Worcestershire sauce. Form into 4 patties.
Heat a grill or skillet over medium-high heat and cook patties for 3-4 minutes per side, adding cheese in the last minute to melt.
Assemble the Pancake Burgers:
Place a pancake on the bottom, followed by a cheeseburger patty, crispy bacon, and a drizzle of maple syrup.
Top with another pancake and secure with a skewer if needed.
