Mashed Potato Cheese Puffs Recipe

  • 2 cups mashed potatoes (leftover or freshly made)

  • 1 cup shredded cheddar cheese

  • 2 eggs

  • 1/4 cup grated Parmesan cheese

  • 2 tbsp chopped green onions

  • 1/2 tsp garlic powder

  • Salt & pepper, to taste

  • 1/4 cup breadcrumbs (optional, for extra crispiness)


Instructions

  • Preheat oven to 400°F (200°C). Grease a mini muffin tin.

  • In a bowl, mix mashed potatoes, cheddar, Parmesan, eggs, green onions, garlic powder, salt, and pepper until well combined.

  • Spoon mixture into mini muffin cups, filling each about 3/4 full.

  • Sprinkle tops lightly with breadcrumbs if desired for extra crunch.

  • Bake 20–25 minutes, until golden brown and slightly crispy on top.

  • Let cool a few minutes before removing from the pan.

  • Serve warm as a snack or side dish.
