2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

2 eggs

1/4 cup grated Parmesan cheese

2 tbsp chopped green onions

1/2 tsp garlic powder

Salt & pepper, to taste

1/4 cup breadcrumbs (optional, for extra crispiness)
Instructions

Preheat oven to 400°F (200°C). Grease a mini muffin tin.

In a bowl, mix mashed potatoes, cheddar, Parmesan, eggs, green onions, garlic powder, salt, and pepper until well combined.

Spoon mixture into mini muffin cups, filling each about 3/4 full.

Sprinkle tops lightly with breadcrumbs if desired for extra crunch.

Bake 20–25 minutes, until golden brown and slightly crispy on top.

Let cool a few minutes before removing from the pan.

Serve warm as a snack or side dish.
