  • 1 lb ground chicken

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 small red onion, diced

  • 1 bell pepper, chopped

  • 1 zucchini, chopped

  • 1 tsp dried oregano

  • Salt & pepper to taste

  • 1/4 cup Kalamata olives, sliced

  • 1/3 cup crumbled feta cheese

  • Optional: fresh parsley or lemon wedges for garnish


Instructions

  • Heat olive oil in a skillet over medium heat.

  • Add onion and garlic; sauté 2–3 minutes until softened.

  • Stir in ground chicken; cook until browned and cooked through.

  • Add bell pepper and zucchini. Cook until just tender.

  • Season with oregano, salt, and pepper.

  • Stir in olives and sprinkle with feta.

 

  • Cook another 2 minutes, then garnish and serve warm.
