1 lb ground chicken

2 tbsp olive oil

2 cloves garlic, minced

1 small red onion, diced

1 bell pepper, chopped

1 zucchini, chopped

1 tsp dried oregano

Salt & pepper to taste

1/4 cup Kalamata olives, sliced

1/3 cup crumbled feta cheese

Optional: fresh parsley or lemon wedges for garnish
Instructions

Heat olive oil in a skillet over medium heat.

Add onion and garlic; sauté 2–3 minutes until softened.

Stir in ground chicken; cook until browned and cooked through.

Add bell pepper and zucchini. Cook until just tender.

Season with oregano, salt, and pepper.

Stir in olives and sprinkle with feta.

Cook another 2 minutes, then garnish and serve warm.
