Ingredients

2 cups fresh or frozen peas (thawed if frozen)
1/4 cup red onion, finely chopped
1/4 cup fresh mint leaves, chopped
1/4 cup crumbled feta or goat cheese
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and black pepper, to taste
Instructions

If using fresh peas, blanch them in boiling water for 2–3 minutes, then drain and cool. If using frozen, thaw and drain well.

In a large bowl, combine peas, red onion, mint, and cheese.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Pour dressing over the salad and toss gently to combine.

Chill for 15–20 minutes before serving for best flavor.
