Minty Pea Salad: A Refreshing, Healthy Side Dish with Feta & Mint

Ingredients

2 cups fresh or frozen peas (thawed if frozen)
1/4 cup red onion, finely chopped
1/4 cup fresh mint leaves, chopped
1/4 cup crumbled feta or goat cheese
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and black pepper, to taste


Instructions

  • If using fresh peas, blanch them in boiling water for 2–3 minutes, then drain and cool. If using frozen, thaw and drain well.

  • In a large bowl, combine peas, red onion, mint, and cheese.

  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  • Pour dressing over the salad and toss gently to combine.

 

  • Chill for 15–20 minutes before serving for best flavor.
