Olive Garden Salad (Copycat Recipe)

For the Salad:

  • 1 head Romaine lettuce, chopped

  • 1/2 cup red onion, thinly sliced

  • 1/2 cup black olives (pitted)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup pepperoncini (mild Italian pickled peppers)

  • 1 cup croutons

  • 1/4 cup shredded or shaved Parmesan cheese


For the Copycat Olive Garden Dressing:

  • 1/2 cup mayonnaise

  • 1/3 cup white vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 2 tablespoons grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon sugar

  • Salt and pepper to taste

  • 12 tablespoons water (to thin, as needed)


Instructions

1. Make the dressing:

  • In a small bowl or jar, whisk together mayonnaise, vinegar, lemon juice, olive oil, Parmesan, garlic powder, Italian seasoning, sugar, salt, and pepper.

  • Add a splash of water to reach desired consistency.

  • Chill in the fridge for 15–30 minutes for best flavor.


2. Assemble the salad:

  • In a large salad bowl, combine chopped lettuce, tomatoes, red onion, black olives, and pepperoncini.

  • Toss gently with chilled dressing until coated.

  • Top with croutons and shredded Parmesan just before serving to keep them crisp.
