Ingredients
For the Salad:

1 head Romaine lettuce, chopped

1/2 cup red onion, thinly sliced

1/2 cup black olives (pitted)

1 cup cherry tomatoes, halved

1/2 cup pepperoncini (mild Italian pickled peppers)

1 cup croutons

1/4 cup shredded or shaved Parmesan cheese
For the Copycat Olive Garden Dressing:

1/2 cup mayonnaise
-
1/3 cup white vinegar
-
1 tablespoon lemon juice
-
1 tablespoon olive oil
-
2 tablespoons grated Parmesan cheese

1 teaspoon garlic powder
-
1 teaspoon Italian seasoning
-
1/2 teaspoon sugar

Salt and pepper to taste

1–2 tablespoons water (to thin, as needed)
Instructions
1. Make the dressing:

In a small bowl or jar, whisk together mayonnaise, vinegar, lemon juice, olive oil, Parmesan, garlic powder, Italian seasoning, sugar, salt, and pepper.

Add a splash of water to reach desired consistency.

Chill in the fridge for 15–30 minutes for best flavor.
2. Assemble the salad:

In a large salad bowl, combine chopped lettuce, tomatoes, red onion, black olives, and pepperoncini.

Toss gently with chilled dressing until coated.

Top with croutons and shredded Parmesan just before serving to keep them crisp.
