Ingredients

14 oz (400g) smoked kielbasa sausage, sliced into rounds

1½ lbs baby potatoes, halved or quartered

1 red bell pepper, chopped

1 green bell pepper, chopped

1 small red onion, sliced

3 tbsp olive oil

1 tsp garlic powder
-
1 tsp smoked paprika

Salt and pepper, to taste

Fresh parsley (for garnish)
Instructions
1. Prep the Ingredients

Wash and cut the potatoes. Slice kielbasa and chop vegetables.
2. Preheat Oven

Preheat oven to 425°F (220°C).

Line a large baking sheet with parchment paper or foil for easy cleanup.
3. Season Everything

In a large bowl, toss potatoes, kielbasa, and veggies with olive oil, garlic powder, smoked paprika, salt, and pepper.
4. Bake

Spread mixture evenly on the baking sheet.

Bake for 25–30 minutes, tossing halfway through, until potatoes are golden and tender, and kielbasa is slightly crispy.
5. Garnish & Serve

Sprinkle with fresh chopped parsley before serving.
