Ingredients
1 lb carrots, peeled and cut into sticks or left whole if small
1 tablespoon olive oil
2 tablespoons honey
1 tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon fresh thyme leaves or chopped parsley (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a bowl, toss carrots with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.

Roast for 20 minutes, stirring once halfway through.

In a small bowl, mix honey and melted butter. Drizzle over the partially roasted carrots.

Roast for another 10–15 minutes, or until carrots are tender and lightly caramelized.

Sprinkle with fresh thyme or parsley before serving, if desired.
