Roasted Carrots with Honey Glaze: A Sweet & Savory Side Dish Recipe

1 lb carrots, peeled and cut into sticks or left whole if small
1 tablespoon olive oil
2 tablespoons honey
1 tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon fresh thyme leaves or chopped parsley (optional)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a bowl, toss carrots with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.

  • Roast for 20 minutes, stirring once halfway through.

  • In a small bowl, mix honey and melted butter. Drizzle over the partially roasted carrots.

  • Roast for another 10–15 minutes, or until carrots are tender and lightly caramelized.

 

  • Sprinkle with fresh thyme or parsley before serving, if desired.
