Ingredients
1 lb fresh radishes, trimmed and halved
1 tablespoon olive oil
Salt and black pepper, to taste
2 tablespoons unsalted butter, softened
1 tablespoon fresh herbs (parsley, chives, dill, or a mix), finely chopped
1 teaspoon lemon juice (optional)
Instructions

Preheat oven to 425°F (220°C).

Toss halved radishes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.

Roast for 20–25 minutes, tossing halfway through, until tender and lightly golden.

Meanwhile, mix softened butter with chopped herbs and lemon juice, if using.

Remove radishes from the oven and gently toss with herb butter while still warm.

Serve immediately as a unique and flavorful side dish.
