Ingredients
For the sheet pan:

1 lb smoked sausage (beef, turkey, or chicken), sliced into ½-inch rounds

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, sliced

2 tbsp olive oil

Salt & black pepper, to taste

1 tsp smoked paprika (optional)
For the honey garlic sauce:

1/4 cup honey

2 tbsp soy sauce
-
1 tbsp Dijon mustard (or yellow mustard)

3 garlic cloves, minced
-
1 tbsp apple cider vinegar (or lemon juice)
Instructions

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease.

Prep the veggies and sausage:
In a large bowl, toss sweet potatoes, peppers, onion, and sausage with olive oil, salt, pepper, and paprika. Spread in an even layer on the sheet pan. -
Bake for 15 minutes. Stir once halfway to ensure even cooking.

Meanwhile, make the honey garlic sauce:
In a small bowl, whisk together honey, soy sauce, mustard, garlic, and vinegar. -
After 15 minutes, remove the sheet pan from the oven and drizzle the honey garlic sauce evenly over everything. Toss gently to coat.

Return to oven and bake for an additional 10–12 minutes, or until sweet potatoes are tender and slightly caramelized.

Serve immediately with fresh herbs like parsley or thyme if desired. Enjoy on its own or over rice, couscous, or quinoa!
