Sheet Pan Sausage and Sweet Potatoes with Honey Garlic Sauce

For the sheet pan:

  • 1 lb smoked sausage (beef, turkey, or chicken), sliced into ½-inch rounds

  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small red onion, sliced

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 1 tsp smoked paprika (optional)

For the honey garlic sauce:

  • 1/4 cup honey

  • 2 tbsp soy sauce

  • 1 tbsp Dijon mustard (or yellow mustard)

  • 3 garlic cloves, minced

  • 1 tbsp apple cider vinegar (or lemon juice)


Instructions

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease.

  • Prep the veggies and sausage:
    In a large bowl, toss sweet potatoes, peppers, onion, and sausage with olive oil, salt, pepper, and paprika. Spread in an even layer on the sheet pan.

  • Bake for 15 minutes. Stir once halfway to ensure even cooking.

  • Meanwhile, make the honey garlic sauce:
    In a small bowl, whisk together honey, soy sauce, mustard, garlic, and vinegar.

  • After 15 minutes, remove the sheet pan from the oven and drizzle the honey garlic sauce evenly over everything. Toss gently to coat.

  • Return to oven and bake for an additional 10–12 minutes, or until sweet potatoes are tender and slightly caramelized.

 

  • Serve immediately with fresh herbs like parsley or thyme if desired. Enjoy on its own or over rice, couscous, or quinoa!
