Ingredients
1 lb smoked sausage (sliced)
4 medium potatoes (peeled and diced)
1 onion (chopped)
2 garlic cloves (minced)
1 can (14.5 oz) diced tomatoes
2 cups beef broth
1 tbsp paprika
1 tsp cumin
1 tsp salt
½ tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley (chopped, for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add the smoked sausage slices and cook until browned, about 5 minutes. Remove and set aside.
In the same pot, sauté the onions and garlic for 2-3 minutes until softened.
Add the diced potatoes, paprika, cumin, salt, and pepper. Stir to coat the potatoes in the seasoning.
Pour in the diced tomatoes and beef broth, stirring to combine. Bring the mixture to a simmer.
Return the sausage to the pot, cover, and cook for 20-25 minutes until the potatoes are tender and the sauce has thickened.
Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
