1 lb ground beef

1/2 cup shredded cheddar cheese

1/4 cup breadcrumbs

1 egg

2 tablespoons BBQ sauce (plus more for glazing)

1 tablespoon ketchup

1 teaspoon Worcestershire sauce

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Optional: 1/4 cup finely chopped pickles or onions

Garnish: extra BBQ sauce, shredded cheese, chives or green onions
Instructions
Preheat Oven:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Mix the Meatballs:
In a large bowl, combine ground beef, shredded cheddar, breadcrumbs, egg, BBQ sauce, ketchup, Worcestershire, smoked paprika, salt, and pepper. Add chopped pickles or onions if using. Mix until just combined—don’t overwork.
Form Meatballs:
Roll the mixture into 1.5-inch meatballs and place them on the prepared baking sheet.
Bake:
Bake for 15–18 minutes, or until meatballs are cooked through and lightly browned.
Add the Glaze:
Brush with additional BBQ sauce and sprinkle with a little extra cheese. Return to oven for 2–3 more minutes until cheese is melted and sticky.
Serve:
Transfer to a platter and sprinkle with chives or green onions. Serve with toothpicks for a perfect party appetizer or game day snack! 🧀🍔🔥
