Strawberry Shortcake Poke Cake: A Sweet and Refreshing Dessert

Ingredients

For the Cake:
  • 🎂 1 box white or yellow cake mix (plus ingredients listed on the box: eggs, oil, water)

  • 🍓 1 (3 oz) box strawberry Jell-O

  • 💧 1 cup boiling water

  • ❄️ 1/2 cup cold water

For the Topping:
  • 🍓 1 1/2 cups fresh strawberries (diced)

  • 🍶 1 (8 oz) tub whipped topping (like Cool Whip), thawed

  • 🍪 6 shortbread cookies or golden Oreos (crushed, optional for garnish)


Instructions

  • Bake the cake in a 9×13-inch pan according to box directions. Let it cool for 10 minutes.

  • Make the Jell-O: In a bowl, dissolve Jell-O in boiling water. Stir in cold water.

  • Poke the cake: Use the handle of a wooden spoon or a straw to poke holes all over the cake.

  • Pour the Jell-O evenly over the cake, letting it seep into the holes. Refrigerate for at least 2 hours.

  • Top it off: Spread whipped topping evenly over the chilled cake.

  • Add strawberries on top and sprinkle with crushed cookies for a shortcake-style crunch.
