Ingredients

1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 tablespoon cornstarch

Salt and pepper, to taste

1 tablespoon oil (vegetable or olive oil)
For the Sauce:

1/2 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar (optional)

1 teaspoon garlic (minced)

1 teaspoon fresh grated ginger (optional)
Optional Garnish:

Sesame seeds

Sliced green onions
Instructions

Coat chicken pieces lightly with cornstarch, salt, and pepper.

Heat oil in a large skillet over medium-high heat.

Add chicken and cook 5–7 minutes until golden and cooked through. Remove excess oil if needed.

Mix sauce ingredients in a bowl: sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger.

Pour sauce into skillet with the chicken. Toss to coat. Simmer for 2–3 minutes until thick and sticky.

Serve hot over rice or noodles. Top with sesame seeds and green onions if desired.
