Ingredients

4 large bell peppers (any color), tops cut off and seeds removed

1 lb ground beef or ground turkey

1 cup cooked rice

1/2 cup diced onion

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup shredded mozzarella or cheddar cheese, divided

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1 cup marinara sauce or tomato sauce

2 tablespoons olive oil
Instructions
Preheat Oven:
Preheat oven to 375°F (190°C).
Prepare Peppers:
Brush bell peppers with 1 tablespoon olive oil inside and out. Place in a baking dish, standing upright.
Cook Filling:
In a skillet, heat remaining olive oil over medium heat. Sauté onion and garlic until fragrant, about 2 minutes. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Cook for 2 more minutes.
Stuff Peppers:
Fill each bell pepper with the beef and rice mixture. Top each with marinara sauce and sprinkle with half of the shredded cheese.
Bake:
Cover with foil and bake for 30 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10–15 minutes until cheese is melted and bubbly.
Serve:
Let cool slightly before serving.
