Instructions
Preheat Oven:
Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or a cast-iron skillet.
Mix Dry Ingredients:
In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar (if using).
Add Wet Ingredients:
In another bowl, beat eggs, then add milk and oil (or melted butter). Mix well, then pour into dry ingredients and stir just until combined.
Add Flavorful Mix-Ins:
Fold in creamed corn, shredded cheese, green chiles, and green onions (if using).
Bake:
Pour batter into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Serve:
Let cool slightly before slicing. Serve warm as a side to chili, stew, or grilled meats. Enjoy!
