Turkey Melt with Cheddar, Spinach, and Bacon: The Ultimate Comfort Sandwich

  • 4 slices hearty bread (sourdough, rye, or whole wheat)

  • 4 slices cooked bacon

  • 46 slices deli turkey (or leftover roast turkey)

  • 4 slices sharp cheddar cheese

  • 1/2 cup fresh baby spinach leaves

  • 2 tablespoons mayonnaise or softened butter (for spreading)

  • Optional: sliced tomatoes or Dijon mustard


Instructions

1. Prep your ingredients:

  • Cook bacon until crispy and drain on paper towels.

  • If using leftover turkey, slice it thin and warm slightly in a pan or microwave.


2. Assemble the sandwich:

  • Lay out 2 slices of bread and layer each with:

    • 1 slice cheddar

    • Slices of turkey

    • 2 strips of bacon

    • A small handful of spinach

    • Another slice of cheddar on top

  • Top with the remaining bread slices.

Optional: Add tomato slices or a light spread of mustard inside if you like extra zip.


3. Grill the melt:

  • Spread mayo or butter on the outsides of the sandwich (the sides facing the pan).

  • Heat a nonstick skillet over medium heat.

  • Grill sandwiches for 3–4 minutes per side, pressing slightly with a spatula, until golden brown and cheese is melted.


4. Serve:

  • Slice diagonally and serve hot with chips, pickles, or a fresh green salad.
