  • 4 cups cooked jasmine rice
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 eggs
  • 1/2 cup green onions chopped
  • 1/4 cup soy sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha or chili sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil for frying

Instructions

  • Prepare your ingredients.
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add mixed vegetables and stir-fry until tender, about 3-4 minutes.
  • Push the vegetables to one side and scramble the eggs on the other.
  • Add the cooked rice, soy sauce, and sesame oil; stir-fry for 5-7 minutes.
  • Drizzle the Bang Bang sauce over the rice and mix thoroughly.
  • Garnish with green onions and serve immediately.
