Prepare the chicken and vegetables.
Heat the vegetable oil in a large skillet over medium-high heat.
Add the sliced chicken to the skillet and cook until browned.
Add the garlic and ginger to the skillet, cooking for 1-2 minutes.
In a small bowl, mix the Sriracha, soy sauce, honey, and cornstarch.
Add the vegetables to the skillet and stir-fry for about 3-4 minutes.
Pour the Sriracha sauce mixture over the chicken and veggies.
Stir well and cook for an additional 2-3 minutes until thickened.
Remove from heat and garnish with green onions before serving.
