Ingredients

  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz corn, drained
  • 4 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or Mexican blend
  • Optional toppings: sour cream chopped cilantro, sliced jalapeƱos

Instructions

  • In a large pot, brown the ground beef.
  • Add the chopped onion and minced garlic to the pot.
  • Stir in the diced tomatoes, black beans, and corn.
  • Pour in the chicken broth and sprinkle the taco seasoning over the mixture.
  • Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes.
  • Stir in the heavy cream and simmer for an additional 5 minutes.
  • Serve hot, topped with shredded cheese and any optional toppings.
