- 1 lb ground beef
- 1 onion chopped
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes
- 1 can 15 oz black beans, rinsed and drained
- 1 can 15 oz corn, drained
- 4 cups chicken broth
- 1 packet taco seasoning
- 1 cup heavy cream
- 1 cup shredded cheese cheddar or Mexican blend
- Optional toppings: sour cream chopped cilantro, sliced jalapeƱos
In a large pot, brown the ground beef.
Add the chopped onion and minced garlic to the pot.
Stir in the diced tomatoes, black beans, and corn.
Pour in the chicken broth and sprinkle the taco seasoning over the mixture.
Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes.
Stir in the heavy cream and simmer for an additional 5 minutes.
