Ingredients

  • 8 ounces of pasta penne or rigatoni
  • 2 boneless skinless chicken breasts
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions until al dente.
  • Preheat the oven to 375°F (190°C).
  • While the pasta cooks, prepare the chicken. Season it with salt, pepper, and oregano.
  • Bread the chicken by dipping it in olive oil and coating it with breadcrumbs.
  • Heat olive oil in a skillet over medium heat and cook the chicken for 4-5 minutes on each side, until golden brown.
  • Remove the chicken from the skillet and set it aside to cool slightly before slicing.
  • In a large mixing bowl, combine the cooked pasta, marinara sauce, and half of the mozzarella cheese.
  • Transfer the pasta mixture to a baking dish and place the sliced chicken on top.
  • Sprinkle the remaining mozzarella cheese and grated Parmesan on top.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes before serving.
