Method
- Preheat your oven to 300°F (150°C).
- Rinse pumpkin seeds under cold water to remove any pulp.
- Dry the seeds with a clean kitchen towel or paper towels.
- Toss the seeds in olive oil, sugar, cinnamon, salt, and vanilla in a mixing bowl.
- Spread the seasoned seeds in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring occasionally.
- Remove from the oven and let cool before serving.
