Delicious Cornflake Crusted Chocolate Chip Cookies

Ingredients

  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 2 cups cornflakes crushed

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the flour mixture to the wet ingredients, mixing just until combined. Do not over-mix.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop, divide the dough into balls about 1 inch in diameter; roll each ball in crushed cornflakes.
  • Place the cornflake-coated dough balls on a parchment-lined baking sheet, spaced about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until golden brown around the edges.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
