Delicious Gluten-Free Tacos for Every Palate

Ingredients
  

  • 1 cup corn flour masa harina
  • 1/2 teaspoon salt
  • 2/3 cup warm water
  • 1 pound ground beef or turkey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup diced avocado
  • 1/2 cup shredded cheese optional
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Method
 

  1. In a mixing bowl, combine the corn flour and salt. Gradually add the warm water, mixing until a soft dough forms. If the dough feels too dry, add a little more water until it’s pliable.
  2. Divide the dough into 8 equal balls. Flatten each ball using a tortilla press or between two sheets of parchment paper until they are about 1/8 inch thick.
  3. Heat a non-stick skillet over medium-high heat. Cook each tortilla for about 1-2 minutes on each side until slightly charred and cooked through. Keep them warm in a clean cloth until you’re ready to serve.
  4. In another skillet, brown the ground beef or turkey over medium heat, breaking it up as it cooks. Drain excess fat if necessary.
  5. Add chili powder, cumin, garlic powder, and onion powder to the meat. Stir well, allowing the spices to coat the meat evenly. Cook for another 2-3 minutes, until heated through.
  6. To assemble your tacos, place a spoonful of the meat mixture onto a tortilla. Top with diced tomatoes, shredded lettuce, avocado, cheese, and cilantro.
  7. Serve with lime wedges to squeeze over the tacos for an extra burst of flavor.
