Preparation
- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted, about 2-3 minutes.
- In a bowl, mix the cooked spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, garlic powder, salt, and pepper.
Cooking
- Place a tortilla in the skillet and spread a portion of the mixture on half of the tortilla.
- Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
- Repeat with remaining tortillas and filling.
Finishing and Serving
- Cut into wedges and serve warm.
Notes
Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven at 350°F or microwave until warmed through.
