Ingredients
  

  • 4 flour tortillas
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup sun-dried tomatoes chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach and sauté until wilted, about 2-3 minutes.
  3. In a bowl, mix the cooked spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, garlic powder, salt, and pepper.
Cooking
  1. Place a tortilla in the skillet and spread a portion of the mixture on half of the tortilla.
  2. Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
  3. Repeat with remaining tortillas and filling.
Finishing and Serving
  1. Cut into wedges and serve warm.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven at 350°F or microwave until warmed through.
