- 4 ears of fresh corn
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese crumbled
- 1 lime juiced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon chili powder
- Salt and pepper to taste
Preheat the grill to medium-high heat.
Brush each ear of corn with olive oil.
Grill the corn for 10-15 minutes, turning occasionally.
