Ingredients
  

  • 4 salmon fillets about 6 ounces each
  • 1/2 cup honey
  • 1 cup fresh pineapple diced
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine honey, soy sauce, lime juice, garlic, ginger, salt, and pepper to create the marinade.
  3. Place salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Allow to marinate for at least 15 minutes.
  4. While the salmon marinates, prepare the pineapple by cutting it into small, uniform pieces if not done already.
  5. Line a baking dish with parchment paper or lightly grease it. Arrange the marinated salmon fillets in the dish and top with the diced pineapple.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes before serving.
