Ingredients

  • 4 salmon fillets about 6 ounces each
  • 1/2 cup honey
  • 1 cup fresh pineapple diced
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine honey, soy sauce, lime juice, garlic, ginger, salt, and pepper to create the marinade.
  • Place salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Allow to marinate for at least 15 minutes.
  • While the salmon marinates, prepare the pineapple by cutting it into small, uniform pieces if not done already.
  • Line a baking dish with parchment paper or lightly grease it. Arrange the marinated salmon fillets in the dish and top with the diced pineapple.
  • Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
