Ingredients

  • 14 oz sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 8 oz semi-sweet chocolate
  • 1 tbsp coconut oil

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a large mixing bowl, combine coconut, condensed milk, vanilla, and salt.
  • Scoop out tablespoon-sized amounts onto a lined baking sheet.
  • Bake for 15-20 minutes until golden brown.
  • Let the macaroons cool completely on a wire rack.
  • Melt chocolate with coconut oil in a microwave-safe bowl.
  • Dip the cooled macaroons halfway in the melted chocolate.
  • Chill the dipped macaroons until the chocolate hardens.
