- Preheat the oven to 325°F (160°C).
- In a large mixing bowl, combine coconut, condensed milk, vanilla, and salt.
- Scoop out tablespoon-sized amounts onto a lined baking sheet.
- Bake for 15-20 minutes until golden brown.
- Let the macaroons cool completely on a wire rack.
- Melt chocolate with coconut oil in a microwave-safe bowl.
- Dip the cooled macaroons halfway in the melted chocolate.
- Chill the dipped macaroons until the chocolate hardens.
