- 14 oz sweetened shredded coconut
- 1 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1/4 tsp salt
- 8 oz semi-sweet chocolate
- 1 tbsp coconut oil
Preheat the oven to 325°F (160°C).
In a large mixing bowl, combine coconut, condensed milk, vanilla, and salt.
Scoop out tablespoon-sized amounts onto a lined baking sheet.
Bake for 15-20 minutes until golden brown.
Let the macaroons cool completely on a wire rack.
Melt chocolate with coconut oil in a microwave-safe bowl.
Dip the cooled macaroons halfway in the melted chocolate.
Chill the dipped macaroons until the chocolate hardens.
