Preheat the oven to 350°F (175°C).
Prepare a 9x9-inch baking pan by lining it with parchment paper.
In a medium bowl, combine graham cracker crumbs and melted butter, mixing well.
Press the mixture into the bottom of the prepared pan to form an even layer.
Bake the crust for 8–10 minutes until lightly golden.
In a large bowl, beat the softened cream cheese until smooth.
Add pumpkin puree, sugar, eggs, vanilla extract, and spices. Beat until fully combined.
Pour the filling over the pre-baked crust and spread it evenly.
Bake for an additional 25–30 minutes or until the center is set.
Remove from the oven and let cool at room temperature before refrigerating for at least 2 hours.
Once chilled, lift the bars out of the pan using the parchment paper and slice into squares.
