Deliciously Easy Meatloaf Cups for Busy Cooks

Easiest Meatloaf Cups made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 1 egg
  • 1 small onion finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese optional
  • Chopped parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, ketchup, egg, onion, garlic powder, salt, and black pepper until fully combined.
  3. Grease a muffin tin with non-stick spray or oil.
  4. Scoop the meat mixture into the muffin tin cups, filling each one about 3/4 of the way full.
  5. If using cheese, sprinkle a small amount on top of each meatloaf cup before baking.
  6. Bake the meatloaf cups in the preheated oven for 20-25 minutes, or until they reach an internal temperature of 160°F (70°C).
  7. Let the meatloaf cups cool for a few minutes before carefully removing them from the muffin tin.
  8. Garnish with chopped parsley if desired and serve warm.
