Preheat your oven to 375°F (190°C).
Prepare the apples by peeling, coring, and slicing them into quarters.
In a bowl, mix the sugar and cinnamon together; then coat the apple slices in this mixture.
Roll out the pie crust on a lightly floured surface.
Cut the pie crust into squares large enough to encase the apple slices.
Place an apple slice in the center of each square and fold the corners over to seal.
Place the dumplings in a greased baking dish.
Melt the butter and mix with water and maple syrup; pour this mixture over the dumplings.
Bake for 30–35 minutes or until golden brown.
Let cool slightly before serving with ice cream or vanilla sauce.
