Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 1 lb scallops cleaned
  • 1 lb white fish fillets like cod or halibut
  • 2 cups cooked rice
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried parsley
  • 1 cup breadcrumbs

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté garlic in a bit of oil until fragrant.
  3. Add shrimp, scallops, and white fish to the skillet; cook for about 5 minutes until just opaque.
  4. Stir in heavy cream, lemon juice, cooked rice, parsley, and season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish, flattening it into an even layer.
  6. Top with cheddar cheese and breadcrumbs, then drizzle a little olive oil over the top.
  7. Bake for 25-30 minutes, or until the top is golden and bubbly.
  8. Let the casserole rest for about 10 minutes before serving.
