Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a floured surface.
Cut the puff pastry into squares (about 4x4 inches).
In a bowl, mix cream cheese, sugar, and vanilla until smooth.
Place a spoonful of cream cheese mixture in the center of each pastry square.
Top each spoonful with diced strawberries.
Fold the corners of the pastry squares toward the center and pinch to seal.
Brush the tops of the pastries with beaten egg.
Bake in the preheated oven for 15-20 minutes or until golden brown.
Allow to cool slightly before serving.
