Preheat the oven to 350°F (175°C).
In a medium saucepan, melt the butter over low heat.
Remove from heat and stir in the sugar until fully combined.
Add in flour, baking soda, salt, and vanilla extract.
If using, fold in chopped nuts.
Drop rounded tablespoons of dough onto a lined baking sheet, spaced apart.
Bake for 8-10 minutes or until edges are golden brown.
Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
