In a medium bowl, combine softened cream cheese, powdered sugar, vanilla extract, and strawberry puree until smooth.
Gently fold in chopped fresh strawberries into the cream cheese mixture.
Unroll the crescent roll dough on a lined baking sheet and separate it into triangles.
Place a spoonful of the strawberry cheesecake filling at the widest end of each triangle.
Roll each triangle from the wide end to the tip and place on the baking sheet, tip-side down.
Brush each roll with the beaten egg and sprinkle with granulated sugar.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Allow rolls to cool for a few minutes before serving.
