Flavorful Chickpea Black Bean Tacos for Every Palate

Savory chickpea black bean tacos blend earthy spices and creamy avocado, making them an ideal choice for gatherings or a cozy weeknight dinner.

Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Toppings: avocado salsa, cilantro, lime wedges

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and sauté for an additional minute.
  4. Add drained chickpeas and black beans to the skillet.
  5. Sprinkle in cumin, chili powder, smoked paprika, salt, and pepper.
  6. Using a fork, mash about half of the chickpeas and black beans.
  7. Warm tortillas in a dry skillet or microwave.
  8. Assemble tacos with the filling and desired toppings.
