Ingredients

  • 1.5 lbs sirloin steak cut into bite-sized pieces
  • 1 lb baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 teaspoons dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the potatoes by halving them and placing them in a large bowl.
  • Drizzle a tablespoon of oil over the potatoes, and season with salt, pepper, and thyme.
  • Spread the seasoned potatoes on one side of a large sheet pan.
  • Place the sheet pan in the oven and roast for 15 minutes.
  • While the potatoes are roasting, prepare the steak by seasoning it with salt and pepper.
  • In a skillet, melt 2 tablespoons of butter over medium heat, adding the minced garlic, stirring until fragrant.
  • Add the steak bites into the skillet, cooking until browned, about 4-5 minutes.
  • Remove the skillet from heat and add the remaining butter, allowing it to melt and coat the steak bites.
  • After the potatoes have roasted for 15 minutes, pull the pan out and add the steak bites on the other side of the pan.
  • Return the sheet pan to the oven and roast for an additional 10-15 minutes until steak is cooked to desired doneness.
  • Once cooked, remove from the oven and let the dish rest for 5 minutes before serving.
  • Serve warm, garnished with fresh herbs if desired.
