Preheat your oven to 425°F (220°C).
Prepare the potatoes by halving them and placing them in a large bowl.
Drizzle a tablespoon of oil over the potatoes, and season with salt, pepper, and thyme.
Spread the seasoned potatoes on one side of a large sheet pan.
Place the sheet pan in the oven and roast for 15 minutes.
While the potatoes are roasting, prepare the steak by seasoning it with salt and pepper.
In a skillet, melt 2 tablespoons of butter over medium heat, adding the minced garlic, stirring until fragrant.
Add the steak bites into the skillet, cooking until browned, about 4-5 minutes.
Remove the skillet from heat and add the remaining butter, allowing it to melt and coat the steak bites.
After the potatoes have roasted for 15 minutes, pull the pan out and add the steak bites on the other side of the pan.
Return the sheet pan to the oven and roast for an additional 10-15 minutes until steak is cooked to desired doneness.
Once cooked, remove from the oven and let the dish rest for 5 minutes before serving.
Serve warm, garnished with fresh herbs if desired.
