Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 tablespoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1 cup powdered sugar
  • 4 oz cream cheese softened
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  • In another bowl, cream together butter and brown sugar until fluffy and light in color.
  • Add molasses and eggs to the butter mixture, mixing until fully combined.
  • Gradually mix in the dry ingredients until just combined, avoiding overmixing.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10–12 minutes, or until the edges are set. Remove and cool on wire racks.
  • While cooling, prepare the filling by beating together cream cheese, powdered sugar, and vanilla until smooth.
  • Once the cookies are cool, pair them up by size and spread filling on one half of each pair before sandwiching them together.
  • Dust the assembled whoopie pies with additional powdered sugar if desired and serve.
