Ingredients
  

  • 1 head of cauliflower grated
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 cup mixed vegetables carrots, peas, corn
  • 2 eggs beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Preparation
  1. Grate the cauliflower using a food processor or box grater until it resembles rice.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add garlic and onion, sauté until fragrant and onion is translucent.
Cooking
  1. Stir in mixed vegetables and cook for another 3-4 minutes.
  2. Push the vegetable mixture to one side of the skillet and pour the beaten eggs onto the other side, scrambling until fully cooked.
  3. Add the grated cauliflower, soy sauce, and sesame oil, mixing everything together.
  4. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
Finishing
  1. Season with salt and pepper to taste, garnish with green onions, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven until warmed through.
