- Heat the olive oil in a large pot over medium heat.

- Add the pearl barley, beef broth, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer.
- Simmer for about 1 to 1.5 hours until the barley is tender.
- Taste and adjust the seasoning as necessary.
- Remove the bay leaf before serving.
