Ingredients

  • 1 pound beef chuck cut into cubes
  • 1 cup pearl barley
  • 1 large onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, carrots, and celery to the pot.
  • Stir in the beef cubes and cook until browned.
  • Add the pearl barley, beef broth, thyme, bay leaf, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and simmer.
