Hearty Beef and Barley Soup for Cozy Days
Rich and hearty, this Beef and Barley Soup combines tender beef, robust vegetables, and chewy barley for a comforting meal, ideal for cozy gatherings.
- 1 pound beef chuck cut into cubes
- 1 cup pearl barley
- 1 large onion chopped
- 2 carrots diced
- 2 celery stalks diced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Heat the olive oil in a large pot over medium heat.
Add the chopped onion, carrots, and celery to the pot.
Stir in the beef cubes and cook until browned.
Add the pearl barley, beef broth, thyme, bay leaf, salt, and pepper.
Bring the mixture to a boil, then reduce the heat and simmer.
Simmer for about 1 to 1.5 hours until the barley is tender.
