Ingredients

  • 4 slices of sourdough bread
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup fresh spinach
  • 1/4 cup sliced bell peppers mixed colors
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Prepare the vegetables for the sandwich.
  • Heat olive oil in a skillet over medium heat.
  • Sauté the sliced onion and bell peppers until soft.
  • Add the spinach to the skillet and stir until wilted.
  • Assemble the sandwich.
  • Heat the skillet again and add the assembled sandwich.
  • Cook for 3-4 minutes, then flip carefully.
  • Cook the other side until golden and cheese is melted.
  • Remove from the skillet and let cool for a minute before slicing.
