- Prepare the vegetables for the sandwich.
- Heat olive oil in a skillet over medium heat.
- Sauté the sliced onion and bell peppers until soft.
- Add the spinach to the skillet and stir until wilted.
- Assemble the sandwich.
- Heat the skillet again and add the assembled sandwich.
- Cook for 3-4 minutes, then flip carefully.
- Cook the other side until golden and cheese is melted.
- Remove from the skillet and let cool for a minute before slicing.
- Slice and serve warm.
