Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños fresh or pickled
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and pepper.
  3. Slice a pocket into each chicken breast and stuff it with the cheese mixture.
Cooking
  1. Secure the opening with toothpicks if necessary.
  2. Rub the outside of the chicken breasts with olive oil and coat with breadcrumbs.
  3. Place the stuffed chicken breasts in a greased baking dish.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
