Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and pepper.
- Slice a pocket into each chicken breast and stuff it with the cheese mixture.
Cooking
- Secure the opening with toothpicks if necessary.
- Rub the outside of the chicken breasts with olive oil and coat with breadcrumbs.
- Place the stuffed chicken breasts in a greased baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Finishing
- Remove from the oven and let rest for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven until warmed through.
