In another bowl, mix together the wet ingredients: oil, almond milk, apple cider vinegar, vegan yogurt, red food coloring, and vanilla extract.
Pour the wet mixture into the dry ingredients and gently mix until just combined.
Divide the batter evenly between the prepared cake pans and smooth the tops.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
Once cooled, frost as desired with your favorite vegan frosting.
