Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe avocado sliced
  • 4 slices of cheese cheddar or provolone work well
  • 4 slices of whole grain or sourdough bread
  • Butter for spreading on bread

Method
 

  1. Preheat your skillet or grill over medium heat.
  2. Rub the chicken breasts with olive oil, then season with garlic powder, paprika, salt, and pepper.
  3. Cook the chicken in the skillet for approximately 6-7 minutes per side, until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes.
  4. While the chicken rests, lightly butter one side of each slice of bread.
  5. On the non-buttered side of two slices, layer the cooked chicken, sliced avocado, and cheese.
  6. Top with the remaining bread slices, buttered side facing out.
  7. Place the sandwiches in the skillet over medium heat. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
