Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe avocado sliced
  • 4 slices of cheese cheddar or provolone work well
  • 4 slices of whole grain or sourdough bread
  • Butter for spreading on bread

Instructions

  • Preheat your skillet or grill over medium heat.
  • Rub the chicken breasts with olive oil, then season with garlic powder, paprika, salt, and pepper.
  • Cook the chicken in the skillet for approximately 6-7 minutes per side, until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes.
  • While the chicken rests, lightly butter one side of each slice of bread.
  • On the non-buttered side of two slices, layer the cooked chicken, sliced avocado, and cheese.
  • Top with the remaining bread slices, buttered side facing out.
  • Place the sandwiches in the skillet over medium heat. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
