Ingredients

  • 1 pound Italian sausage casings removed
  • 1 cup lentils rinsed and drained
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 can diced tomatoes 14.5 ounces
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Brown the sausage in a skillet over medium heat.
  • Transfer the browned sausage to the slow cooker.
  • Add diced onions, garlic, carrots, and celery to the slow cooker.
  • Stir in the lentils, diced tomatoes, vegetable broth, thyme, and smoked paprika.
