Ingredients
  

  • 1 pound Italian sausage casings removed
  • 1 cup lentils rinsed and drained
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 can diced tomatoes 14.5 ounces
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Brown the sausage in a skillet over medium heat.
  2. Transfer the browned sausage to the slow cooker.
  3. Add diced onions, garlic, carrots, and celery to the slow cooker.
  4. Stir in the lentils, diced tomatoes, vegetable broth, thyme, and smoked paprika.
  5. Season with salt and pepper, then cover and set the slow cooker.
  6. Check for lentil tenderness toward the end of cooking.
  7. Once cooked, taste and adjust seasoning as necessary.
  8. Serve hot, garnished with fresh parsley.
