Ingredients
  

  • 12 oz rotini pasta
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz corn, drained
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 1/2 red onion finely chopped
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions, then drain and rinse
  2. In a large bowl, combine the black beans, corn, cherry tomatoes, bell pepper, red onion, and avocado
  3. Add the cooked and cooled pasta to the vegetable mixture
  4. In a separate small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper
  5. Pour the dressing over the salad and gently toss to combine
  6. Fold in the chopped cilantro just before serving
  7. Taste and adjust seasoning if necessary before serving
