Method
- Cook the pasta according to package instructions, then drain and rinse
- In a large bowl, combine the black beans, corn, cherry tomatoes, bell pepper, red onion, and avocado
- Add the cooked and cooled pasta to the vegetable mixture
- In a separate small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper
- Pour the dressing over the salad and gently toss to combine
- Fold in the chopped cilantro just before serving
- Taste and adjust seasoning if necessary before serving
