Ingredients

  • 12 oz rotini pasta
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz corn, drained
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 1/2 red onion finely chopped
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions, then drain and rinse
  • In a large bowl, combine the black beans, corn, cherry tomatoes, bell pepper, red onion, and avocado
  • Add the cooked and cooled pasta to the vegetable mixture
  • In a separate small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper
  • Pour the dressing over the salad and gently toss to combine
  • Fold in the chopped cilantro just before serving
  • Taste and adjust seasoning if necessary before serving
