Ingredients

  • 4 salmon fillets about 6 oz. each
  • 1/4 cup unsalted butter melted
  • 4 cloves garlic minced
  • Juice and zest of 2 lemons
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound asparagus trimmed
  • 1 pint cherry tomatoes halved

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare a large sheet pan by lining it with parchment paper or aluminum foil.
  • In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  • Place the salmon fillets on one side of the prepared sheet pan.
  • Arrange the asparagus and cherry tomatoes on the other side of the sheet pan.
  • Drizzle the butter-garlic mixture over the salmon and vegetables.
  • Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove the sheet pan from the oven and let it rest for 2-3 minutes before serving.
