Ingredients
  

  • 4 salmon fillets about 6 oz. each
  • 1/4 cup unsalted butter melted
  • 4 cloves garlic minced
  • Juice and zest of 2 lemons
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound asparagus trimmed
  • 1 pint cherry tomatoes halved

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a large sheet pan by lining it with parchment paper or aluminum foil.
  3. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  4. Place the salmon fillets on one side of the prepared sheet pan.
  5. Arrange the asparagus and cherry tomatoes on the other side of the sheet pan.
  6. Drizzle the butter-garlic mixture over the salmon and vegetables.
  7. Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove the sheet pan from the oven and let it rest for 2-3 minutes before serving.
