Ingredients
  

  • 1 lb smoked sausage
  • 1 cup long-grain white rice
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and black pepper to taste
  • 2 green onions sliced for garnish

Method
 

  1. Slice the smoked sausage into bite-sized pieces.
  2. In a large skillet, heat a tablespoon of oil over medium heat and add the sausage.
  3. Add the onion and green bell pepper; cook until softened, about 5 minutes.
  4. Stir in the garlic and cook for an additional minute until fragrant.
  5. Pour in the diced tomatoes with their juices, rice, Cajun seasoning, and chicken broth; mix well.
  6. Bring the mixture to a boil, then reduce the heat to low and cover.
  7. Allow it to simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Remove from heat; let it sit covered for 5 minutes before fluffing with a fork.
  9. Garnish with sliced green onions before serving.
