In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper.
Brush each cabbage steak generously with the oil and spice mixture.
Place the cabbage steaks on a baking sheet lined with parchment paper.
Roast the cabbage in the preheated oven for 25-30 minutes, flipping halfway through.
Once golden brown and crispy, remove from the oven and let cool slightly before serving.
