Savory Crockpot Cowboy Casserole Recipe
This CROCKPOT COWBOY CASSEROLE blends savory ground beef, zesty spices, and creamy cheese for a comforting dish ideal for cozy gatherings or weeknight meals.
- 1 lb ground beef
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 10.5 oz diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 2 cups tater tots
- 1 small onion diced
- 2 cloves garlic minced
Brown the ground beef and sauté the onion and garlic.
Drain excess fat from beef mixture.
Combine beef with beans, corn, tomatoes, and taco seasoning.
Layer the mixture in the crockpot.
Top with tater tots and cheese.
Cook on low for 6-8 hours or high for 3-4 hours.
Serve warm with toppings if desired.
